I added a recipe for my Mojito Raspberry Paletas to a the Vegetarian Foodie Friday blog carnival a couple days ago. As I did, I noticed a recipe for Fresh Pasta with Spinach, Mushroom & Mustard Sauce and I knew immediately that I had to make it. I ended up making it for my parents tonight and yum!!!!! Everyone devoured it and oohed and aahhed as well. My daughter had three helpings and even scoured the pasta bowl for any remaining mushrooms. There wasn’t a whole lot of “sauce” since only a 1/2 cup of cream is in the dish. It fed 7 people so it is actually very light IMO and that is fine by me.
I used the pasta my parents had on hand.. which was just boxed linguine but next time I will be making noodles from scratch, as the recipe calls for. Otherwise it was very easy to make. I used baby Bella brown mushrooms, fresh spinach, Dijon mustard, cream, and two types of cheese on top… fresh grated Parmesan and Romano. And we paired the pasta with buttered Rosemary herb bread.
My folks admitted that the whole idea of mustard on their pasta had them scared but now they are proclaiming that this is the best dish I ever made for them.
Guess it was winner!
